Nearly every menu (96%) includes chicken, a figure that has hardly changed in ten years. What has changed is the variety: restaurants that serve chicken now list roughly 22 chicken dishes on average, a 21% increase over the decade.

Fast casual is leading the charge. Over the past ten years, the average fast casual menu has grown its chicken offerings by 83%, the largest jump of any segment. Quick-service restaurants followed with a 38% increase. Midscale restaurants still carry the widest selection, averaging 26.5 chicken items per menu.

Wraps show the trend most clearly. They now appear on 32% of menus that feature chicken, up 22% in four years. Fast casual is the segment most likely to offer them, with 44% of its chicken menus including wraps, compared with roughly one-third of quick-service, midscale, and casual dining menus.
